I decided I wanted to see what all the smoothie hype is about, plus I’m looking for any reason to include Nikki’s Coconut Butter into a recipe. This is a pretty simple recipe, and I initially intended to add avocado but was seriously lacking produce this morning.
12 oz coconut water
2 cups spinach, chopped (stems removed)
1 cup strawberries
2 tbsp Nikki’s Coconut Butter Macademia Nut Cookie
1/4 cup cacao nibs
Ice cubes (as needed)
Directions — Add coconut water to the blender first, followed by spinach, strawberries, coconut butter, and cacao nibs. Blend on smoothie setting, adding ice as needed. Pour and serve with a straw. Always with a straw.
